Unit 2: An Introduction to Nutrition

The foods we eat contain nutrients that provide energy and keep the body healthy. Every food and beverage that is consumed is broken down into its component parts – macronutrients (carbohydrates, proteins, fats and water) and micronutrients (vitamins and minerals). These nutrients provide the energy needed to fuel activity, are the basis for building muscle and other tissues, and protect vital organs. Understanding why certain foods are considered healthier than others may help guide choices toward a more nutrient-rich diet.

Key topics include:

  • Basic digestion
  • Understanding the healthy role of carbohydrates, proteins and fats in the diet
  • The importance of fluid intake throughout the day
  • Vitamins, minerals and phytonutrients for healthy aging
